This recipe can work with any fish fillet, ask your local fishmonger for recommendations. Serve with a side salad to complete a light lunch.
- 3 lbs Cobia
- 1/3 cup olive oil
- 1/3 cup lemon juice
- 1 clove garlic (minced)
- 1 tsp salt
- ¼ tsp pepper
- 1 jar Sable & Rosenfeld Mediterranean Bruschetta
- Cut fillets into serving size pieces, and place in a bowl. Combine olive oil and lemon juice. Add all remaining spices to oil and lemon juice, and mix. Pour mixture over fish steaks. Marinate for 5 - 10 minutes.
- Remove from marinade and grill for about 6 minutes over coals, basting several times with marinade. Turn and grill an additional 4 - 6 minutes or until fish is opaque and separates easily.
- To serve: top each fillet with warmed Mediterranean Bruschetta and serve additional bruschetta on the side.
