INGREDIENTS
- 3 lbs Cobia
- ⅓ cup olive oil
- ⅓ cup lemon juice
- 1 clove garlic (minced)
- 1 tsp salt
- ¼ tsp pepper
- Sable & Rosenfeld Mediterranean Bruschetta
PREPARATION
Cut fillets into serving-size pieces, and place in a bowl. Combine olive oil and lemon juice. Add all remaining spices to oil and lemon juice, and mix. Pour mixture over fish steaks. Marinate for 5 - 10 minutes. Remove from marinade and grill for about 6 minutes over coals, basting several times with marinade. Turn and grill an additional 4 - 6 minutes or until fish is opaque and separates easily. To serve: top each fillet with warmed Mediterranean Bruschetta and serve additional bruschetta on the side.
