INGREDIENTS
- 1 Tbsp extra-virgin olive oil
- 1 large shallot, diced small
- 1 lb Cremini mushrooms, sliced
- Salt and ground pepper to taste
- 2 tsp fresh thyme leaves, chopped, plus more for serving or 1 tsp dried thyme leaves
- ¾ cup grated Gruyere cheese (2 oz)

PREPARATION
Preheat the oven to 375°F and place the Party Cups on a baking sheet. In a large skillet, heat oil over medium-high heat. Add the shallot and cook, stirring until soft, about 3 minutes. Add the mushrooms and continue to cook, stirring until they are soft and browned, about 10 minutes. Season with salt and pepper, then stir in thyme and remove the skillet from heat. Divide the mushroom mixture and cheese among the cups, and bake for approximately 10 minutes. Sprinkle with additional thyme and serve warm.
